Response: Hello Bunny,

Usually a reception held in a tent means that all of the food has to be brought in from another location. Therefore, if you have a sitdown dinner, the plates will have to be filled in a kitchen somewhere, then transported to the guests. The distance may be only a few hundred feet, but it clearly isnt as convenient as having the kitchen next to the banquet room, and the food probably wont be as warm.

For that reason, most meals held in an outdoor location are served buffet style. A fully decorated table with ice sculptures would only work at a buffet.

As for the meat, I wouldnt serve steak at a buffet. However, a whole baked salmon works well, as does thinly sliced meat be careful about sauces and juices, such as roast beef, roast pork, or turkey breast.
