I am a wedding photographer and some of the photographers I know do charge a full fee the day of the wedding. I ask that the couple pay for half of the shoot a month prior, the rest of the shoot the day of, and then after you look at proofs, you can choose pictures one by one to get exactly what you want. You probably got a wedding 'package', and this doesnt mean that your photographer is being unfair or dishonest. Everyone has different methods of running the financial side of their business. Id say that about 50% of photographer will ask for the money early, and 50% will ask for a percent and get the rest after the enlargements are made. I hope this helped!
