Response: Hi Angie, Marriage is a sacrament of the Catholic church and therefore the ceremony must be performed in a church. You wont find a priest who will perform the ceremony outdoors, though you can find many ministers of other denominations who would perform it.
Before you can be married in the Catholic church, you and your fiance will need to attend pre-marriage classes and may also need to attend an engagement encounter weekend retreat. This all takes at least 4 months.
If you want to have the large outdoor wedding, you might have a small private wedding first at the church. That way you have fulfilled the churchs requirements and then you can have the outdoor wedding with the ceremony performed by the person of your choosing. If you do this, anyone can perform the ceremony, including a father or grandfather, because the outdoor ceremony will not be legal. The ceremony at the church will be your legal wedding.
Conversely, you could have the outdoor wedding, then go through the pre-marriage classes and be remarried in the church, assuming your family would agree.
The way to handle rain or heat or other weather issues is to either choose a location that has an indoor option if the weather turns bad, or rent a tent.
