Response: You do not have to serve cake if you dont want to. I have had brides who served cheesecake, German obst kuchen, ice cream baked potatoes, and those who offered a variety of mini bite-sized desserts. Next month, a couple will be serving huckleberry pie. We will have a traditional cutting including serving each other a bite of it. If you really dont want to serve cake, perhaps your mother will be more willing to listen if she sees that other desserts are options. If she really has her heart set on you having cake, then you might have a small cake and supplement it with the ice cream cakes. One thing to consider with ice cream cakes, however, is how quickly they melt if they are not immediately consumed. If you are having a large wedding, you wont want your guests to have plates of melted ice cream.
