Response: The food that you serve depends on the time of day of the reception. If it will be near the dinner hour you will need to serve more food than if it will be in mid-afternoon or later in the evening. If there is no on-site catering kitchen, you will need to choose foods that can be served at room temperature or that your caterer can bring in hot boxes. Your caterer can provide menus from which to choose appropriate foods. You will also want to choose foods that will not quickly spoil when left sitting out. Therefore, avoid foods that contain eggs, cream, seafood, or creamy salad dressings. Good choices are pasta salads, cheeses, fruit, some types of meat, and breads or crackers.
