The thing you will need to find out is if the facility where you are having the reception has a kitchen with stove/ovens/refrigerator. If it does not, you need to communicate that information to the caterer, then he will need to bring food that is already prepared and that does not need refrigeration or heating.
If he is a caterer, he should have menus that he can share with you to help you in making your decision. If you have a particular type of food that you enjoy, such as Mexican or Italian, you might build your menu around that.
Another option is to have the caterer bring a large, portable grill and cook chicken or steak on-site. Guests really enjoy that and if you dont accompany the meat with barbeque side dishes, it will not be a barbeque. In my area we have an Italian restaurant that does on-site grilling of things like chicken marinara.
